Pumpkin Tiramisu

Ingredients

  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon grated nutmeg
  • 1/2 teaspoon salt
  • 1 cup heavy cream
  • 1 cup mascarpone cheese, softened
  • 1/2 cup milk
  • 2 tablespoons amaretto liqueur
  • 24 ladyfingers
  • Whipped cream, for serving

Instructions

  1. Beat pumpkin puree, 1/2 cup of granulated sugar, pumpkin pie spice, nutmeg, and salt in a bowl until smooth.
  2. In a separate bowl, beat the heavy cream with a hand mixer or a stand mixer until stiff peaks form. Add the mascarpone cheese and mix until combined.
  3. In another bowl, whisk together milk, amaretto liqueur, and remaining sugar.
  4. Quickly dip ladyfingers in the milk mixture, and layer them in the bottom of a 9x13 inch dish. Spread half of the pumpkin mixture over the ladyfingers, followed by half of the mascarpone mixture. Repeat layers.
  5. Cover with plastic wrap and chill for at least 2 hours or overnight.
  6. Just before serving, top with whipped cream, and serve.

  2. Add in milk, and stir until mixtures is well-combined. Cook for about 10 minutes, stirring constantly, until mixture thickens up to custard consistency
  3. Remove the custard from heat and allow it to cool down.
  4. Beat heavy cream in a bowl with a mixer until stiff peaks form. Add mascarpone cheese, and mix until combined. Stir in vanilla extract.
  5. In a separate bowl, mix coffee and Kahlua.
  6. Quickly dip ladyfingers in coffee mixture, and layer them in the bottom of a 9x13 inch dish. Spread half of the mascarpone mixture over the ladyfingers, then repeat layers.
  7. Cover with plastic wrap and chill for at least 2 hours or overnight.
  8. Just before serving, sprinkle with cocoa powder, and serve.
