Pioneer Woman Red Potato Salad

Red Potato Salad with Dill
Now, I gotta give a shoutout to whoever created this recipe. I found it on Pinterest, but I don't know the dude's name. Anyway, let me tell you how to make it.
First, you gotta get about 2 pounds of red potatoes. Cut 'em in bite-size pieces, rinse 'em, and put 'em in a pot. Fill it up with water until the potatoes are covered, and then add a tablespoon of salt. Bring that to a boil, and let it simmer for about 12-15 minutes, until the potatoes are tender.
While that's cooking, let's prepare the dressing. You'll need:
- 3 tablespoons of vinegar (preferably white wine vinegar)
- 1 tablespoon of Dijon mustard
- 1/4 cup of olive oil
- 1/4 cup of chopped fresh dill
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Mix all of that in a bowl, and set it aside. Once the potatoes are done, drain 'em and rinse 'em with cold water. You don't want 'em to be hot when you mix 'em with the dressing, or else the flavor won't be as good.
Now, mix the potatoes with the dressing, and make sure they're all covered. Put that in the fridge for at least an hour, so it can chill and the flavors can meld together.
German Potato Salad
Now, I gotta give a shoutout to Brenda for this one. She shared her recipe on Pinterest, and let me tell you, it's fire. If you're in the mood for something tangy and slightly sweet, give this German Potato Salad a try.
Here's what you need:
- 2 pounds of red potatoes
- 4-5 slices of bacon
- 1/2 cup of diced onion
- 1/4 cup of white wine vinegar
- 1/4 cup of water
- 2 tablespoons of sugar
- 1 tablespoon of flour
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Start by cutting the potatoes in bite-size pieces, and boiling them in a pot of water for about 12-15 minutes, until they're tender. Drain 'em and set 'em aside.
Cook the bacon until it's crispy, and then remove it from the pan. Chop it up in small pieces, and set it aside. Leave the bacon grease in the pan, 'cause we're gonna use it to cook the onions.
Add the diced onion to the pan with the bacon grease, and cook it until it's soft and translucent. Then, add the vinegar, water, sugar, flour, salt, and pepper. Mix that together and let it cook for about 2-3 minutes, until the sauce thickens a bit.
Now, add the potatoes and the chopped bacon to the pan, and mix everything together until the potatoes are coated with the sauce.
Let it cook for another minute or two, so the potatoes can absorb all the flavors. Then, you're done!
