Migas Pioneer Woman
Have y'all ever had migas? If not, you're missing out on some bomb-ass Mexican breakfast food. I found these two recipes on the internet and decided to give them a try. They were both delicious in their own way, so I'm sharing them with y'all.
Migas Recipe

The first recipe I tried was from Cooking Blog. It was super easy to follow and the end result was delicious. Here's what you'll need:
- 6 corn tortillas
- 1 large tomato
- 1/2 onion
- 2 jalapeño peppers
- 4 eggs
- 1/4 cup shredded cheese
- Salt and pepper to taste
First, cut the tortillas into small pieces and fry until they're crispy. Set them aside. Then, chop the tomato, onion, and jalapeño peppers and fry them in a pan until they're soft. Add the eggs and scramble them together with the veggies. Once the eggs are cooked, add the tortilla pieces and mix everything together. Top with shredded cheese and enjoy!
Pioneer Woman's Migas Recipe

The second recipe I tried was from the Pioneer Woman. It had a lot more ingredients and steps, but the end result was just as tasty. Here's what you'll need:
- 2 tablespoons olive oil
- 1/2 onion
- 1/2 red bell pepper
- 1/2 yellow bell pepper
- 1/2 orange bell pepper
- 1 jalapeño pepper
- 6 corn tortillas
- 1 can of black beans
- 2 tablespoons tomato paste
- 1/4 cup chopped cilantro
- 4 eggs
- 1/4 cup milk
- 1/2 cup shredded cheese
- Salt and pepper to taste
First, heat the olive oil in a large skillet and fry the onion, bell peppers, and jalapeño until they're soft. Add the tortilla pieces and cook until they're crispy. Then, add the black beans, tomato paste, and cilantro and cook for another 5 minutes. Heat another skillet and scramble the eggs with the milk, salt, and pepper. Once the eggs are cooked, add them to the skillet with the veggie mixture. Top everything with shredded cheese and enjoy!
