Pioneer Woman's Pasta Primavera Recipe

To make this pasta primavera, you'll need:
- 1 pound of pasta
- 1 zucchini, diced
- 1 yellow squash, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 onion, diced
- 4 cloves of garlic, minced
- 1/2 cup of vegetable broth
- 1/2 cup of heavy cream
- 1/2 cup of freshly grated Parmesan cheese
- 2 tablespoons of olive oil
- Salt and pepper to taste
Directions:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta and set aside.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Add the zucchini, squash, bell peppers, onion, and garlic. Season with salt and pepper to taste.
- Cook the vegetables, stirring occasionally, for about 10-12 minutes or until tender and slightly caramelized.
- Add the vegetable broth to the skillet and stir to combine. Bring the mixture to a simmer and cook for 2-3 minutes.
- Add the heavy cream to the skillet and stir to combine. Cook for another 2-3 minutes or until the sauce has thickened slightly.
- Add the cooked pasta to the skillet and toss to coat with the sauce. Stir in the Parmesan cheese.
- Serve hot and enjoy!
