- Preheat your oven to 350 degrees F.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté for about 5 minutes, until the onion is softened.
- Add the beef roast to the skillet and brown on all sides.
- In a small bowl, whisk together the red wine, beef broth, Worcestershire sauce, Dijon mustard, thyme, salt, and pepper.
- Pour the wine mixture over the beef roast in the skillet.
