Jalapeno Coleslaw Recipe Pioneer Woman

Ingredients:
- 1/2 head of cabbage, finely shredded
- 2 carrots, peeled and grated
- 1/4 cup of white onion, chopped
- 1/4 cup of cilantro, chopped
- 1/2 cup of mayonnaise
- 2 tbsp of jalapeño pepper, finely chopped
- 2 tbsp of white vinegar
- 1 tbsp of honey
- 1 tsp of smoked paprika
- 1/2 tsp of garlic powder
- 1/2 tsp of onion powder
- Salt and pepper to taste
Begin by finely shredding 1/2 head of cabbage and grating 2 carrots. Add the chopped white onion and cilantro to the mix.
In a separate bowl, combine 1/2 cup of mayonnaise, 2 tbsp of jalapeño pepper, 2 tbsp of white vinegar, 1 tbsp of honey, 1 tsp of smoked paprika, 1/2 tsp of garlic powder, 1/2 tsp of onion powder and salt and pepper to taste. Mix until well combined.
Pour the dressing over the cabbage mixture and stir until fully coated. Cover and refrigerate for at least 30 minutes before serving.

- Salt and pepper to taste
- 1/2 bunch of cilantro, chopped
- 1/2 head of purple cabbage, thinly sliced
Begin by grilling the corn until lightly charred. Cut the kernels off the cob and place them in a large bowl. Add the finely chopped jalapeño peppers to the mix.
In a separate bowl, combine 2 tbsp of fresh lime juice, 1 tbsp of honey, 1/4 cup of olive oil and salt and pepper to taste. Mix until well combined.
Pour the dressing over the corn and jalapeño mixture and stir until fully coated. Add the chopped cilantro and sliced purple cabbage to the mix and stir until well combined. Cover and refrigerate for at least 30 minutes before serving.
