Ingredients:
- 4-5 pound beef brisket
- 2 onions, chopped
- 4 garlic cloves, minced
- 1 cup ketchup
- 1/2 cup brown sugar
- 1/2 cup red wine vinegar
- 1/4 cup Worcestershire sauce
- 2 tablespoons Dijon mustard
- 2 tablespoons matzo meal (for Passover) or all-purpose flour (for non-Passover)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 cup beef broth or chicken broth
Instructions:
- Preheat oven to 325°F.
- Sprinkle the brisket with salt, black pepper, paprika, thyme, rosemary, garlic powder, and onion powder.
- Heat a large Dutch oven over medium-high heat. Place the brisket in the Dutch oven and cook for 4-5 minutes on each side until browned. Remove the brisket and set aside.
- Add the onions to the same Dutch oven and cook until translucent, about 5 minutes. Add the garlic and cook for 1 minute.
- In a bowl, whisk together the ketchup, brown sugar, red wine vinegar, Worcestershire sauce, Dijon mustard, matzo meal or flour, salt, and black pepper. Add this mixture to the Dutch oven with the onions and garlic.
- Cook, stirring constantly, until the mixture thickens, about 5 minutes.
- Gradually whisk in the beef broth or chicken broth and bring the mixture to a simmer. Return the brisket to the Dutch oven and spoon the sauce over the brisket.
- Cover with a tight-fitting lid and bake in the preheated oven for 3-4 hours, or until the brisket is very tender.
- Remove the brisket from the oven and let it rest for 10 minutes.
- Transfer the brisket to a cutting board and slice it against the grain.
- Return the sliced brisket to the Dutch oven and spoon the sauce over the sliced brisket.
- Place the Dutch oven on the stovetop and heat the brisket and sauce over medium heat until hot.
And voila! You now have a delicious and hearty brisket that is perfect for your Passover seder. Enjoy!
