Vegetable Lasagna Pioneer Woman Recipe

Ingredients:

  • 12 lasagna noodles
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (14.5 ounces) diced tomatoes, drained

  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped

Instructions:

  1. Cook lasagna noodles according to package directions, then rinse and set aside.
  2. Heat olive oil in a large saucepan over medium-high heat.
  3. Add onion, bell peppers, and garlic, and cook until tender and fragrant.
  4. Add crushed tomatoes, diced tomatoes, oregano, basil, sugar, salt, pepper, tomato sauce, and water to the saucepan, and stir to combine.

  9. In a 9x13 inch baking dish, spread 1 cup of the tomato sauce mixture on the bottom of the dish.
  10. Add a layer of lasagna noodles on top of the sauce.

  13. Add a layer of the tomato sauce mixture on top of the lasagna noodles.

  16. Sprinkle 1/2 cup of grated mozzarella cheese and 1/4 cup of grated Parmesan cheese on top of the tomato sauce mixture.
  17. Cover the baking dish with foil and bake for 25 minutes.
  18. Remove the foil and bake for an additional 25 minutes or until the cheese has melted and is lightly golden brown.
  19. Let cool for 10-15 minutes before serving.
