Twice Baked Potatoes Pioneer Woman
My sister-in-law shared with me The Pioneer Woman's Twice Baked Potato Casserole Recipe, and I have to tell you - it is the BEST! This recipe is perfect for family gatherings, potlucks or serving it alongside a hearty main course. It's a fantastic dish to make ahead of time, too.
The ingredients you'll need are:
- 6 large baking potatoes
- 1 cup sour cream
- 1/2 cup milk
- 2 tablespoons butter
- 1/2 teaspoon seasoned salt
- 1/2 teaspoon black pepper
- 1 cup grated cheddar cheese
- 8 slices bacon, cooked and crumbled
- 4 green onions, sliced
First, bake your potatoes in the oven at 400F for 1 hour or until they're tender. Once they're done, you'll want to scoop out the insides of the potatoes and place them in a mixing bowl. Be careful not to rip the skins as you need them to hold your filling later.
Add the sour cream, milk, butter, seasoned salt and pepper to the mixing bowl with the potatoes, and using a hand mixer, blend everything together until it's smooth and creamy. Next, fold in the cheddar cheese, bacon and green onions until everything is well-combined.
Spoon the filling mixture back into the potato skins and place them in a baking dish. Top each potato with a little bit of extra cheese and bacon, and bake them in the oven at 375F for 15-20 minutes or until everything is bubbling and golden brown.
