This custard recipe, also known as creme anglaise, is perfect for pouring over desserts or enjoying on its own. Here's what you'll need:

  • 1 cup of milk
  • 1 cup of heavy cream
  • 6 egg yolks
  • 1/2 cup of granulated sugar
  • 1 tsp of vanilla extract

To make the custard, start by heating the milk and heavy cream in a saucepan over medium heat. In a separate bowl, whisk together the egg yolks and sugar until pale and creamy. Once the milk mixture is hot, gradually pour it into the egg yolk mixture, whisking constantly. Pour the mixture back into the saucepan and place it back on the heat. Whisk the mixture constantly until it thickens enough to coat the back of a spoon.

Remove the saucepan from the heat and stir in the vanilla extract. Strain the custard through a fine-mesh sieve to remove any lumps or bits of cooked egg. Cover the custard with plastic wrap, making sure the wrap is touching the surface of the custard to prevent a skin from forming. Chill the custard in the fridge for at least 2 hours before serving.

Southern Style Boiled Custard

This next custard recipe, known as boiled custard, is a Southern favorite. Here's what you'll need:

  • 4 cups of milk
  • 1 cup of heavy cream
  • 6 egg yolks
  • 1 1/2 cups of granulated sugar
  • 1 tsp of vanilla extract

To make this custard, combine the milk, heavy cream, egg yolks, and sugar in a saucepan. Cook the mixture over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon. Remove the saucepan from the heat and stir in the vanilla extract.

To serve the custard warm, pour it into a heat-proof pitcher or individual cups. To serve the custard chilled, pour it into a container and cover it with plastic wrap, making sure the wrap is touching the surface of the custard to prevent a skin from forming. Chill the custard in the fridge for at least 2 hours before serving.
