Pioneer Woman Grilled Corn Salad
Summer is finally here, and we all know what that means - it's time to fire up the grill! One of my favorite things to grill is corn on the cob, and I've found the perfect recipe to make it even more delicious. This grilled corn salad with cilantro vinaigrette is sure to be a hit at your next BBQ.
Grilled Corn Salad
To start, you'll need to grill your corn. I love using fresh, sweet corn for this recipe. Simply brush the ears with a little olive oil and grill them until they're tender and nicely charred. Once the corn is cool enough to handle, cut the kernels off the cob and set them aside.
Cilantro Vinaigrette
Next, you'll need to make the cilantro vinaigrette. In a blender or food processor, combine one cup of fresh cilantro leaves, one clove of garlic, the juice of one lime, a pinch of salt, and 1/4 cup of olive oil. Blend until smooth.
Toss and Serve
Once you have your grilled corn and cilantro vinaigrette, it's time to put everything together. In a large bowl, combine the corn with one chopped bell pepper, one chopped tomato, and one diced avocado. Pour the cilantro vinaigrette over the top and toss everything together until it's well coated. Serve chilled and enjoy!
