Chipotle Chicken Chili Recipe
This Chipotle Chicken Chili recipe is packed with bold flavors that are sure to satisfy your craving for comfort food. The combination of tender chunks of chicken, spicy chipotle peppers, and hearty beans makes for a filling and flavorful meal. Here's what you'll need:
- 2 tablespoons olive oil
- 2 cups chopped white onions
- 4 cloves garlic, minced
- 2 pounds boneless, skinless chicken breasts, cubed
- 1 tablespoon ground cumin
- 2 tablespoons chili powder
- 2 teaspoons dried oregano
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt, plus more to taste
- 2 cans (14.5 ounces each) diced tomatoes, undrained
- 2 cups chicken stock
- 2 cans (15.5 ounces each) pinto beans, drained and rinsed
- 2 cans (15.5 ounces each) black beans, drained and rinsed
- 1 can (15.5 ounces) whole kernel corn, drained
- 2 canned chipotle peppers in adobo sauce, chopped
- 2 tablespoons adobo sauce from the chipotle pepper can
- Sour cream, shredded Monterey Jack cheese, and chopped scallions, for serving
Start by heating the olive oil in a large pot over medium-high heat. Add the onions and garlic, and cook until the onions are translucent, about 5 minutes. Add the cubed chicken to the pot, and season with cumin, chili powder, oregano, cayenne pepper, and salt. Cook the chicken until it's browned on all sides, about 6-8 minutes.
Add the diced tomatoes, chicken stock, pinto beans, black beans, corn, chipotle peppers, and adobo sauce to the pot, and stir to combine. Bring the mixture to a simmer, then reduce the heat to medium-low and let it simmer for 30 minutes.
Taste the chili and adjust the seasoning as needed with additional salt and cayenne pepper. Serve the chili hot, topped with a dollop of sour cream, some shredded Monterey Jack cheese, and chopped scallions, if desired.
