Pioneer Woman Turkey Brine

I don't know about you, but when it comes to Thanksgiving, the centerpiece of the meal is always the turkey. And let me tell you, I have found the most amazing recipe for a roasted Thanksgiving turkey and brine that will have your guests begging for seconds!

Roasted Thanksgiving Turkey

First, the brine. I discovered this recipe from The Pioneer Woman, and it is truly the best. I've made a few modifications to make it my own, but the base recipe is all hers.

The Brine

Brined Turkey

Ingredients:

  • 1 cup kosher salt
  • 1 cup brown sugar
  • 1 gallon chicken broth
  • 1 tablespoon black peppercorns
  • 1 1/2 teaspoons allspice berries
  • 1 1/2 teaspoons chopped fresh ginger
  • 1 gallon heavily iced water

Instructions:

  1. In a large pot, combine the salt, brown sugar, chicken broth, peppercorns, allspice berries, and ginger. Stir to combine and dissolve the salt and sugar.
  2. Bring the mixture to a boil, then turn off the heat and allow it to cool to room temperature.
  3. Once the brine is cool, place your turkey in a large container (big enough to hold the turkey and the brine), breast side down.
  4. Pour the brine over the turkey, making sure it is fully submerged. If you need more liquid, add cold water until the turkey is covered.
  5. Cover the container and refrigerate for at least 8 hours (or up to 24 hours).

Once the turkey has been brined, it's time to roast it to perfection.

The Roast

Roasted Thanksgiving Turkey

Ingredients:

  • 1 turkey (12-15 pounds)
  • 1 stick of butter, melted
  • Salt and pepper

Instructions:

  1. Preheat your oven to 325°F.
  2. Remove the turkey from the brine and rinse it under cold water. Pat it dry with paper towels.
  3. Place the turkey on a rack in a roasting pan. Brush the melted butter all over the turkey, making sure to get it into all the nooks and crannies.
  4. Season the turkey generously with salt and pepper.
  5. Insert a meat thermometer into the thickest part of the turkey (the thigh), making sure it does not touch the bone.
  6. Roast the turkey in the preheated oven until the internal temperature reaches 165°F. This will take anywhere from 3-4 hours, depending on the size of your turkey.
  7. Once the turkey is done, remove it from the oven and let it rest for at least 15 minutes before carving. This will allow the juices to redistribute throughout the meat.
