BBQ Potato Salad Pioneer Woman
I recently came across a couple of mouth-watering pictures of potato salads that I just had to try. I mean, what's summer without a good BBQ and some delicious sides, am I right?
Rule-Breaking Potato Salad
The first one I tried was a recipe from the Pioneer Woman. Now, I am someone who likes to follow recipes to the T, but this one was a little different - it was a rule-breaking potato salad. Intrigued, I decided to give it a shot.
The ingredients were pretty standard - boiled potatoes, hard-boiled eggs, mayo, mustard, onions, bacon, and pickles. But the twist was in how they were put together. Instead of mixing everything in a bowl, the Pioneer Woman suggested layering it all in a casserole dish. It looked pretty interesting.
After prepping all the ingredients, I assembled the dish as instructed and popped it in the fridge to chill. And let me tell you, when I took it out and saw those layers, it was a thing of beauty.
But the true test was in the taste. And I have to say, it was pretty dang good. The different layers provided different textures and flavors, and the dressing was just the right amount of tangy. It was a bit heavy on the mayo for my taste, but that's an easy fix for next time.
Roasted Potato Salad
The second potato salad I tried was a little different. It was a roasted potato salad, which meant the potatoes were roasted in the oven before being mixed with the other ingredients. I found the recipe on Pinterest and it looked amazing.
The recipe called for red potatoes, but I had some Yukon golds on hand, so I used those instead. I chopped them up, tossed them in some olive oil, salt, and pepper, and roasted them in the oven for about 30 minutes.
While the potatoes were roasting, I mixed together the dressing - mayo, sour cream, Dijon mustard, garlic, lemon juice, and some herbs. Once the potatoes were done, I let them cool for a bit and then mixed them with some chopped bacon, green onions, and the dressing.
This potato salad was more of a traditional style, with creaminess from the mayo and tanginess from the dressing. But the roasted potatoes added a nice crispy texture and a slightly nutty flavor. It was a hit at the BBQ.
Two Delicious Potato Salads
Overall, I was pretty impressed with both potato salads. Each had its own unique twist and flavor, and they were both crowd-pleasers. Whether you're a rule-breaker or a traditionalist, there's a potato salad out there for you. Just be sure to serve it up at your next summer gathering!
