Pioneer Woman Chicken Quesadillas
Oh my goodness, y'all gotta try this chicken quesadilla recipe. It's from The Pioneer Woman and let me tell you, it is absolutely amazing. It's super easy to make and so delicious. You won't be disappointed.
Ingredients:
- 2 tbsp. butter
- 2 tbsp. olive oil
- 3 bell peppers, sliced (use a variety of colors for some extra pizzazz)
- 1 onion, sliced
- 3 cloves garlic, minced
- 3 cups cooked chicken, shredded
- 1 tsp. chili powder
- 1 tsp. cumin
- 1 tsp. garlic powder
- 1/2 tsp. paprika
- Salt and pepper, to taste
- 8-10 flour tortillas
- 2 cups shredded Monterey Jack cheese
- 2 cups shredded cheddar cheese
- Cilantro, for garnish (optional)
- Salsa, sour cream, guacamole, and any other desired toppings
To start, heat the butter and olive oil in a large skillet over medium-high heat. Add the sliced bell peppers and onion and sauté for about 5 minutes, until they start to soften. Add in the garlic and stir for another minute or two.
Toss in the shredded chicken and stir to combine. Sprinkle in the chili powder, cumin, garlic powder, paprika, salt, and pepper. Give everything a good mix and let it cook for a few minutes to let the flavors meld together.
Grab a separate skillet or griddle and heat it up over medium-high heat. Place a flour tortilla on the skillet and sprinkle some of the shredded cheese on one half of it. Spoon some of the chicken and pepper mixture over the cheese and add some more cheese on top. Fold the tortilla in half and press down gently with a spatula. Cook for a few minutes until the cheese is melted and the tortilla is starting to turn golden. Flip the quesadilla over and cook for another couple of minutes on the other side.
Pro tip:
If you're feeling fancy, chop up some fresh cilantro and sprinkle it on top of the quesadillas to give them a pop of color and flavor. Serve with your favorite salsa, sour cream, guacamole, or any other toppings you desire.
